You hold her somewhat firmly, but not squeezing her. Just don't give her any room to move. You hold her across your hand, and wrap your fingers around her. Your index finger is more or less on her forehead, preventing her from slipping down, as you point her head towards the bottom of the tank.
This is all done in the water, you don't want to take the female cichlid out of the water if at all possible, to prevent her from really panicking.
That would be fine to do it in a bucket, but once you've caught her in the tank you probably have no need to using a bucket, except maybe just to keep the cichlid fry separate.
